Bacon Sun-dried Tomato Alfredo Pasta

Prep: 1 Minute Cook: 14 minutes
Weight Watchers Points Plus Value - 8 pts

8 oz uncooked multigrain penne
10 oz refrigerated light Alfredo sauce (I use Buitoni)
1/2 cup sun-dried tomatoes, packed without oil and cut into julienne strips
1-2 cloves garlic, minced
10 slices precooked bacon
1/4 cup chopped fresh basil
1/4 tsp freshly ground black pepper



  1. Cook pasta according to package directions, omitting salt and fat, drain and keep warm

  2. While pasta cooks, sautee garlic, onions, mushrooms, and any other veggies you like with 1 tsp olive oil.

  3. In pan with sauteed veggies, combine Alfredo sauce and sun-dried tomatoes in a saucepan. Cook over low heat, stirring occasionally, 6 to 8 minutes or until thoroughly heated and tomatoes are juicy and plump.

  4. While sauce cooks, microwave bacon according to package directions, crumble and set aside.

  5. Toss pasta, sauce, bacon, basil and pepper in bowl and serve.

Yield: 5 servings (serving size 1 cup)


**Hints** I can never find light Alfredo sauce, so I mix 1 tsp flour with 6 oz COLD skim milk and add to 5 oz of the regular sauce, stirring until sauce thickens.


Add 15 oz cooked chicken for an additional 3 pts per serving. Or grill up some chicken and serve this as a side dish
