8 oz uncooked multigrain penne
10 oz refrigerated light Alfredo sauce (I use Buitoni)
1/2 cup sun-dried tomatoes, packed without oil and cut into julienne strips
1-2 cloves garlic, minced
10 slices precooked bacon
1/4 cup chopped fresh basil
1/4 tsp freshly ground black pepper
- Cook pasta according to package directions, omitting salt and fat, drain and keep warm
- While pasta cooks, sautee garlic, onions, mushrooms, and any other veggies you like with 1 tsp olive oil.
- In pan with sauteed veggies, combine Alfredo sauce and sun-dried tomatoes in a saucepan. Cook over low heat, stirring occasionally, 6 to 8 minutes or until thoroughly heated and tomatoes are juicy and plump.
- While sauce cooks, microwave bacon according to package directions, crumble and set aside.
- Toss pasta, sauce, bacon, basil and pepper in bowl and serve.
Yield: 5 servings (serving size 1 cup)
**Hints** I can never find light Alfredo sauce, so I mix 1 tsp flour with 6 oz COLD skim milk and add to 5 oz of the regular sauce, stirring until sauce thickens.
Add 15 oz cooked chicken for an additional 3 pts per serving. Or grill up some chicken and serve this as a side dish
